- 1 large onion, peeled and diced

- 5 cloves garlic, peeled and minced

- 2 cups beef stock, made with 1 stock cube
- 1 1/2teaspoons salt
- 1 pinch cracked black pepper
- 400grams chopped tomatoes
- 600grams potatoes, peeled and chopped into cubes
- 3tablespoons cornflour
- 3tablespoons dill, fresh, chopped

Description
Ukrainian food is known for being hearty and filling and this delicious beef and potato stew is no exception.
Method
Step 1 of 4
Heat the oil in a large, hob-safe casserole dish on medium heat, season and seal the beef on all sides, 2-3 minutes. Add the onions and garlic and cook for 5 minutes. Stir in the smoked paprika and seasoning and cook for 2 minutes.
Step 2 of 4
Pour over the chopped tomatoes, a can of water and the beef stock. Bring to a simmer and cook with the lid on low heat for 1.5 hours, until the beef is tender.
Step 3 of 4
Transfer the beef to a bowl with a slotted spoon and add the potatoes to the pot. Add more water if necessary to submerge them. Cook for 20 minutes until the potatoes are tender. Add the beef back into the pot.
Step 4 of 4
Whisk the cornflour with 3 tablespoons of water to form a slurry, pour into the stew and cook for 2-3 minutes, stirring until thickened. Top with fresh dill and serve with a dollop of sour cream if desired.
