- 500grams braising beef, chopped into pieces
- 1 large onion, peeled and chopped
- 1 celery stick, sliced
- 2 3/4 cups beef stock, hot, made with 1 stock cube
- 500grams butternut squash, peeled, deseeded and chopped into cubes
- 300grams potatoes
- 1/4 bunch rosemary, about 3 sprigs
- 3 bay leaves

Description
This warming beef stew is a one pot meal with hearty butternut squash and potatoes.
Method
Step 1 of 4
Heat half of the oil in a large, deep casserole and cook the beef in batches for 2 minutes on each side to brown. Remove with a slotted spoon and set aside.
Step 2 of 4
Add the remaining oil, onions and celery to the casserole and cook for 5-6 minutes. Add the beef back into the pan with its juices.
Step 3 of 4
Add the rosemary, beef stock, bay leaves, butternut squash and potatoes and bring to the boil. Reduce the heat, cover and simmer for 1 hour.
Step 4 of 4
Remove the lid and cook uncovered for 20 minutes to reduce the sauce. Remove the rosemary and bay leaves and serve.
