- 1kilograms braising beef, chopped into pieces
- 1 large onion, peeled and chopped
- 3 celery sticks, sliced
- 4 large carrots, peeled and chopped into chunks
- 1tablespoons tomato puree
- 1L beef stock, hot, made with 2 stock cubes
- 600grams baby potatoes, halved
- 1/4 bunch parsley, fresh, chopped

Description
This Irish beef stew is simple but delicious comfort food, delicious served with crusty bread.
Method
Step 1 of 4
Pre-heat the oven to 180°C. Heat half of the oil in a large, deep casserole and cook the beef in batches for 2 minutes on each side to brown. Remove with a slotted spoon and set aside.
Step 2 of 4
Add the remaining oil, onions, carrots and celery to the casserole and cook for 5-6 minutes. Add the beef back into the pan with its juices and stir in the tomato puree.
Step 3 of 4
Add the beef stock and potatoes and bring to the boil. Cover with the lid and cook for 1 hour in the oven.
Step 4 of 4
Remove the lid and cook uncovered for 20 minutes to reduce the sauce. Stir in fresh parsley and serve.
