- 1tablespoons olive oil
- 800grams lamb chops, boneless, trimmed
- 500grams potatoes, peeled and chopped into chunks
- 2 medium onions, peeled and sliced
- 1 large leeks, sliced
- 2 medium carrots, peeled and chopped
- 3 cups lamb stock, made with 2 stock cubes
- 50grams pearl barley
- 1/2 bunch parsley, fresh, chopped
Description
Juicy lamb chops and potatoes make Irish stew delicious and hearty.
Method
Step 1 of 2
Pre-heat the oven to 160°C. Heat the oil in a large pan on medium high heat. Cook the lamb for 2 minutes on each side and place in casserole dish.
Step 2 of 2
Add the onions, potatoes, carrots, leeks, pearl barley and lamb stock to the casserole dish and pour over the lamb stock. Cover and cook for 2 hours, stirring halfway through. Scatter with chopped parsley and serve.
