  • 2 medium onions, peeled and sliced
  • 500grams stewing beef, diced
  • 3 1/4 cups beef stock, made with 2 stock cubes
  • 350grams parsnips, peeled and chopped
  • 150grams carrots, peeled and chopped
  • 300grams potatoes, peeled and chopped
  • 1/4 bunch rosemary, 2 sprigs
  • 1/2 bunch parsley, fresh, chopped

Description

This simple casserole is packed with tender beef and root vegetables for a warming and comforting dinner.

Method

Step 1 of 3

Heat the oil in a large casserole dish on medium high heat and cook the onions for 5 minutes. Add the beef and cook for 5 minutes to brown all over, stirring.

Step 2 of 3

Pour over the stock, add the chopped vegetables and rosemary and bring to the boil. Reduce the heat, cover and simmer for 1 hour.

Step 3 of 3

Remove the lid and leave to cook for 15 minutes to reduce the sauce slightly. Serve with chopped parsley on top.
