9 Ingredients
- 1tablespoons canola oil
- 1 medium white onion
- 4 cloves garlic, peeled and mashed
- 3 medium chicken breasts, no skin or bone and diced
- 3 medium capsicum, mixed colours, de-seeded and chopped
- 400grams tomatoes
- 1 1/4 cup chicken stock
- 1 medium carrot, diced
- 1teaspoons thyme
Description
A one pot chicken casserole with light seasoning and plenty of crunchy veg.
Method
Step 1 of 6
Pre-heat the oven to 180°C/160°C fan-forced.
Step 2 of 6
Heat up a sauce pan to a medium heat and then add the canola oil.
Step 3 of 6
Fry the carrots, onion and garlic for 4 minutes.
Step 4 of 6
Add the chicken to the pan and fry for a further 6 minutes while tossing.
Step 5 of 6
Add the rest of the ingredients to the pan and cook while stirring for 5 minutes.
Step 6 of 6
Transfer everything to an oven safe casserole dish and bake in the oven for 40 minutes before serving.
