Greek-Style Lamb Shank Casserole

- 2tablespoons olive oil
- 6 lamb shanks
- 10 cloves garlic
- 6 bay leaves
- 2tablespoons oregano, dried
- 1/2teaspoons cinnamon
- 2 large lemons, juice and zest
- 1.20kilograms baby potatoes, halved
- 350grams tomatoes
- 200grams feta, crumbled
Description
This garlicky lamb kleftiko is a deliciously different way to enjoy lamb shanks with lots of Greek flavour.
Method
Step 1 of 4
Pre-heat the oven to 170°C. Add half of the oil, lemon juice, oregano, cinnamon, bay leaves and garlic to a large, oven-safe casserole dish and mix well.
Step 2 of 4
Add the potatoes, tomatoes, lamb shanks and 3/4 of the feta to the casserole dish and mix well. Pour over the remaining oil and 100ml of water and cover with a layer of foil and the casserole lid.
Step 3 of 4
Bake for 3 hours until the lamb is completely tender, checking halfway through cooking and adding more water if necessary. Remove the lid, sprinkle over a teaspoon of lemon zest and cook for 30 minutes more.
Step 4 of 4
Serve with the remaining feta crumbled on top and a Greek salad on the side, if desired.
