  • 675grams lean lamb, cut into 2cm cubes
  • 3teaspoons paprika
  • 1teaspoons cayenne pepper
  • 2 lemons, zest only
  • 10tablespoons olive oil
  • 3 onions, finely diced
  • 1.10kilograms potatoes
  • 1 large handful fresh flat-leaf parsley, finely chopped
  • 6 cloves garlic, grated or finely chopped
  • 2tablespoons fresh thyme, finely chopped
  • 1tablespoons fresh rosemary leaves, finely chopped
  • 6 preserved lemons, quartered and pith removed
  • 1 pinch salt
  • 1 pinch freshly ground black pepper

Method

Step 1 of 2

Preheat the oven to 150°C. Put the lamb, paprika, cayenne, and lemon zest in a mixing bowl, combine well, then put to one side. Heat 4 tablespoons of the oil in a large casserole, add the onions, and cook over a medium heat for 3 minutes. Add the lamb and cook, stirring frequently, for 5 minutes, or until no longer pink.

Add the potatoes and cook for 2 minutes, then add the parsley, garlic, thyme, rosemary, preserved lemons, and the rest of the olive oil. Combine well, season with salt and black pepper, and cover with a lid. Place in the oven and cook, stirring frequently, for 1 1 / 2 hours.
