- 500grams gravy beef, cubed (or any beef cut)
- 1/2 cup olive oil
- 1 large brown onion
- 4 medium roma tomatoes, roughly chopped
- 4 whole garlic cloves, peeled
- 1/4 cup chopped fresh parsley
- 1 1/2 cup celery stalks, chopped
- 1/2 habanero chilli (optional)
- 2 large basil leaves
- 1teaspoons dried thyme
- 410grams tomato puree (one can)
- 1/2teaspoons curry powder
- 1teaspoons white pepper
- 1tablespoons smoked paprika
- 1tablespoons powdered chicken stock
- 2 spring onions, sliced

Description
A delicious take on west African beef stew, cooked in big pots during xmas or any celebration. Also just a great weeknight dinner.
Method
Step 1 of 6
In a pot, boil beef, a small handful of diced onion, salt and pepper for 30mins. Removed beef once boiled.
Step 2 of 6
Add 1/2 - 1 cup of oil to a deep saucepan, on medium/high heat, brown beef, remove beef from pan and set aside.
Step 3 of 6
In a blender, blend roma tomatos, onion, garlic, basil, parsley, thyme, celery and habanero chilli untill it looks like puree.
Step 4 of 6
Pour the vegetable puree into saucepan that you cooked the meat in. Add tin of tomato puree, curry powder, white pepper, smoked paprika and chicken stock and stir to combine. Bring to boil then reduce heat and simmer for 30 mins.
Step 5 of 6
After 30 mins, return the browned beef and simmer for another 10-15 mins, stiring frequently. After 10-15 mins add spring onions and stir through.

Serve warm and enjoy.
