- 3 mandarins
- 1 spring onion, sliced (to garnish)
- 2teaspoons ground ginger
- 1/2 cup chicken stock
- 2 garlic cloves, crushed
- 1/3 cup soy sauce
- 4 pork cutlets
- 1/4 cup brown sugar
- 2tablespoons vegetable oil

Description
Slow cook pork cutlets in a sweet, tangy sauce for a mouth-watering one-pot meal. Serve over rice and with a side of greens.
Method
Step 1 of 3
Preheat oven to 150°C. Finely grate rind of 1 mandarin, then juice. Peel and segment remaining mandarins and set aside.

Combine mandarin juice, rind, stock, soy, sugar, garlic, ginger and white pepper in a jug.
Step 3 of 3
Lightly coat cutlets with flour. Heat oil in a large shallow flameproof casserole over medium heat. Add cutlets and cook for 3 minutes each side or until golden brown. Pour juice mixture over cutlets and bring to the boil. Cover. Cook in oven for 1 ½ hours or until cutlets are tender (or cook in a pressure cooker for 15 minutes – refer to manufacturer’s guidelines). Top with mandarin segments and onion.
