  • 300grams steamed green beans (to serve)
  • 1 leek, trimmed, sliced
  • 1.70kilograms whole chicken
  • 1tablespoons baby capers in salt, rinsed
  • 2 lemons (and some charred lemon wedges to serve)
  • 2tablespoons olive oil
  • 5 sprig thyme
  • 2 garlic cloves, crushed
  • 1 cup white wine

Method

Step 1 of 3

Cut chicken into 8 pieces and season. Heat the oil in a frying pan and cook chicken, turning frequently, for 5 minutes or until well browned. Transfer to a slow cooker or ovenproof casserole.

Step 2 of 3

Finely shred the rind from the lemons. Using a small knife, remove the pith and divide flesh into segments. Add lemon segments, rind, leek, garlic and thyme to the slow cooker. Pour over the wine.

Step 3 of 3

Set the slow cooker to HIGH and cook for 1 hour or until chicken is cooked through. Stir in capers. Serve with steamed green beans and charred lemon wedges.
