Method

Step 1 of 3

Cook rice according to packet instructions, following absorption method, adding carrot and peas for the last 5 minutes of cooking time. Fluff up rice mixture with a fork.

Step 2 of 3

Meanwhile, heat oil in a wok or large frying pan over high heat. Add egg and swirl to coat base in a thin layer. Cook for 2 minutes or until set and golden underneath. Transfer to a plate. When cool enough to handle, roll into a log and thinly slice.

Step 3 of 3

Heat butter in same wok or frying pan over high heat. Cook onion, stirring, for 5 minutes or until softened. Add rice and soy sauce, and cook, stirring, for 2 minutes or until heated through. Serve topped with egg.
