Method

Step 1 of 5

Prep: Bring 3 cups water to the boil in a large saucepan. Add rice, stir well and bring back to the boil. Reduce heat to very low. Cover with a tight-fitting lid and cook for 15 minutes or until the water is absorbed. Set aside, covered, for 10 minutes.

Step 2 of 5

Line a tray with baking paper. Spread over rice. Chill in fridge for 20 minutes or until cooled completely. Transfer to a large snap-lock bag and seal.

Heat 1 tbs oil in a frying pan or wok over high heat. Add the egg and swirl to cover pan. Cook for 2-3 minutes or until just set. Slide out onto a board. Roll up and slice. Set aside to cool.

Step 4 of 5

Add bacon and cook for 2 minutes. Set aside to cool completely. Place egg, peas, prawns and cooled bacon into small snap-lock bag. Remove air and seal. Place inside larger bag of rice, lay flat, and seal. Label and date, then freeze flat for up to 2 months.

Cook: Defrost rice in fridge overnight. Heat 2 tbs oil in a wok. Add rice and toss over high heat for 2-3 minutes. Stir in bacon and veg mixture with soy sauce, sesame oil, spring onion and ginger. Toss for 1 minute, then serve.
