- 2 cloves garlic, crushed
- 2 rasher rindless bacon, chopped
- 200grams frozen peas
- 1tablespoons ginger, grated
- 4 spring onions, finely sliced
- 250grams cooked and peeled cocktail prawns
- 2tablespoons soy sauce
- 300grams jasmine rice
- 2tablespoons vegetable oil
- 2 eggs, beaten

Method
Step 1 of 3
Cook rice following the packet directions. Spread onto a baking tray and chill overnight (this will stop the rice grains sticking together).

Heat a wok or frying pan over high heat. Add egg and swirl pan so that it forms a thin omelette. Cook for 2 minutes until just set. Transfer to a board and when cool, cut into thin shreds. Meanwhile add bacon to the pan and cook for 2-3 minutes or until golden and crisp. Transfer to the plate.

Heat the oil in the wok. Add the garlic and ginger and cook for 10 seconds. Add the cooked rice and stir-fry for 2 minutes, until lightly toasted. Stir in the peas and spring onions and cook for 2 minutes. Add prawns, soy sauce, egg and bacon until heated through and combined. Serve.
