- 250grams king prawns, cooked, peeled, deveined
- 2 cloves garlic, peeled and minced
- 1tablespoons vegetable stir fry mix
- 2tablespoons sesame oil
- 5centimeters ginger, peeled and grated
- 4 spring onions, finely sliced, green tops reserved
- 500grams brown rice, ready cooked
- 2 eggs, beaten
- 150grams pineapple, fresh, chopped
- 4tablespoons soy sauce, reduced salt
Description
This easy prawn and pineapple egg fried rice is just as satisfying as a takeaway and a little healthier with brown rice.
Method
Step 1 of 3
Heat half of the oil in a large pan or wok on medium high heat and cook the garlic, vegetable mix, ginger and spring onions for 4 minutes. Transfer to a bowl and set aside.
Step 2 of 3
Heat the rest of the oil in the same pan on low heat and pour in the eggs. Cook for 30 seconds, stirring to scramble, then tip in the rice packs, vegetables, prawns, soy sauce and pineapple and cook for 2-3 minutes until piping hot.

Serve with sliced spring onion tops scattered on top.
