  • 1 cup rice
  • 1 bunch broccolini
  • 1/2 capsicum
  • 1 brown onion
  • 1 carrot
  • 1/4 cabbage
  • pinch salt & pepper
  • 1teaspoons garlic
  • 1teaspoons soy sauce
  • handful nuts

Description

This stir-fry recipe is for nights when you want to cook something quick and easy. Plus, it’s great for using whatever you have in the fridge or pantry.

Method

Step 1 of 4

In a saucepan put 1 cup of rice with 2 1/2 cups water, cook rice to your like.

Step 2 of 4

While rice is cooking, cut up all vegetables, put all into a bowl except onion & garlic. Pour over boiling water (from kettle) to blanch the veggies for 1 min.

Step 3 of 4

In a wok, heat oil, put onion & garlic until soft, then drain vegetables & add to the wok, add soy sauce, salt & pepper. Taste and add as much soy sauce, salt & pepper to your liking.

Step 4 of 4

Crush any nuts you have, serve all together & enjoy.
