  • 450grams microwave brown rice
  • 4tablespoons chilli infused olive oil
  • 1 onion, chopped
  • 4 clove garlic, crushed
  • 300grams kale & spinach leaf mix
  • 4 eggs
  • 4tablespoons soy sauce
  • 200grams honey soy tofu

Description

A healthy fried rice, full of flavour, with a warming hint of chilli.

Method

Step 1 of 5

Cook microwave rice, following packet directions.

Step 2 of 5

Heat oil in a large saucepan over medium low heat. Add onion and cook, stirring for 5 minutes. Add garlic and cook, stirring for a further 3 minutes.

Step 3 of 5

Add the kale and spinach mix and stir until wilted. Add the rice and cook, stirring for a further 2 minutes.

Step 4 of 5

Crack 4 eggs, separately, into the rice mixture, stirring between each to cook and mix through. Add the soy sauce, stirring through.

Step 5 of 5

Divide mixture between 4 bowls and top with slices of tofu.
