  • 400grams basmati rice, cooked as per pack instructions
  • 1 pinch salt
  • 1 pinch pepper
  • 1teaspoons mustard seeds
  • 1teaspoons cumin seeds
  • 2teaspoons coconut oil

Description

This kale and coconut basmati rice makes an interesting accompliment to any curry.

Method

Step 1 of 3

Wash the basmati rice until the water becomes clear and then allow to rest in water. Cook the rice as per pack instructions which should take 20 minutes.

Step 2 of 3

Fry up the coconut oil with the mustard and cumin seeds for 2 minutes or until the seeds begin to pop.

Step 3 of 3

Then add the kale to the pan and fry for a further 2 minutes. Add the rice to the pan, fry for a further 3 minutes before serving.
