- 1tablespoons sunflower oil
- 1 large onion, chopped
- 1 clove garlic, crushed
- 400grams sweet potatoes, peeled and cut into small chunks
- 1 large red capsicum, cored, deseeded and chopped
- 1tablespoons chilli powder
- 800grams can chopped tomatoes
- 2/3 cup vegetable stock
- 400grams can red kidney beans, drained and rinsed
- 400grams can black beans, drained and rinsed
- 15grams plain dark chocolate, grated
- 2tablespoons fresh coriander, chopped
- 1teaspoons salt
- 1teaspoons black pepper
- 1/4 cup sour cream, to serve
Method
Step 1 of 3
Heat the oil in a large saucepan, add the onion and garlic and cook over a medium heat for 2-3 minutes until softened. Add the sweet potatoes and red capsicumand cook for 2 minutes.

Stir in the chilli powder, tomatoes, stock and all the beans and bring to the boil. Reduce the heat, cover and simmer gently for 20-25 minutes until the vegetables are tender. Season to taste with salt and pepper.
Step 3 of 3
Add the chocolate and coriander and cook for a further 2-3 minutes. Serve with long-grain rice topped with spoonfuls of soured cream.
