  • 125grams steamed brown rice cup
  • 1 egg
  • 1tablespoons vegetable oil

Method

Step 1 of 3

Whisk teriyaki sauce, oil and vinegar together in a small bowl to make dressing. Place rice in a shallow microwave safe bowl, add 2 tbs dressing and mix to combine. Make a shallow well in the centre of rice.

Step 2 of 3

Crack the egg into the rice, cover with a microwave safe lid and microwave for 1 minute on high or until egg is just set.

Step 3 of 3

Place carrot, avocado and cucumber around egg and on top of rice, drizzle with remaining dressing and scatter with sesame seeds. Serve immediately.
