- 150grams dried green tea soba noodles
- 1 1/2tablespoons rice wine vinegar
- 1tablespoons lime juice
- 2teaspoons honey
- 2teaspoons white sesame seeds
- 2teaspoons Ayam light soy sauce
- 1/3 cup edamame beans, shelled
- 1 clove garlic, crushed
- 3tablespoons smooth peanut butter

Cook soba noodles according to packet instructions. Refresh in iced water and drain.

Meanwhile, combine all peanut butter, rice wine vinegar, lime juice, sesame oil, soy sauce, honey, garlic and ginger in a bowl and whisk to combine.
Step 3 of 3
Place remaining salad ingredients in a large bowl and toss to combine. Divide among serving bowls, drizzle over peanut dressing and top with sesame seeds and spring onions.
