  • 450grams firm tofu (cut into 12 slices)
  • 2tablespoons Tabasco sauce (plus extra to serve, optional)
  • 60grams butter
  • 1 avocado, sliced
  • 2 red capsicums, deseeded, thinly sliced
  • 1 red onion, thinly sliced
  • 1 1/2teaspoons ground cumin
  • 2teaspoons paprika
  • 2tablespoons lemon juice
  • 1 lemon, wedges
  • 400grams black beans, rinsed, drained
  • 1tablespoons olive oil
  • 1/4 cup firmly packed brown sugar
  • 200grams streaky bacon rashers
  • 2 gem lettuce, leaves separated
  • 2 cloves garlic, crushed

Method

Step 1 of 5

Preheat grill on high. Line a baking tray with foil. Place tofu and bacon in a single layer on tray and set aside.

Step 2 of 5

Combine butter, sugar, paprika, cumin, hot sauce and lemon juice in a bowl. Pour into a small frying pan over medium heat and stir for 2 minutes or until butter melts and mixture is warmed through. Remove from heat.

Step 3 of 5

Baste tofu and bacon with sauce. Grill for 8 minutes, turning halfway, and baste until bacon is crisp and tofu is warmed through.

Step 4 of 5

Meanwhile, heat oil in a large frying pan over high heat. Add onion, capsicum and garlic and cook for 4 minutes, stirring, or until just soft.

Step 5 of 5

Arrange lettuce, avocado, capsicum mixture, tofu and bacon on plates. Scatter over beans and serve with lemon wedges and extra hot sauce, if using.
