Baked Asian Greens With Soy & Coconut Sprinkle

- 1 fresh long red chilli, thinly sliced
- 1 bunch baby pak choy
- 2tablespoons shredded coconut, toasted
- 1 bunch broccolini
- 2teaspoons sesame seeds, toasted
- 200grams frozen edamame salad, thawed
- 1 1/2tablespoons olive oil
- 2 cloves garlic, thinly sliced
- 1/4 cup sweet soy sauce

Step 1 of 3
Preheat oven to 220°C. Line a large baking tray with baking paper.
Step 2 of 3
Place pak choy and broccolini on tray. Drizzle with 1 tbs oil and bake for 10 minutes or until tender, adding edamame to tray for the last 3 minutes of cooking. Season.
Step 3 of 3
Meanwhile, heat remaining oil in a small frying pan over medium-high heat. Cook garlic and chilli, stirring, for 1 minute or until fragrant. Add soy sauce and bring to the boil. Remove from heat. Serve greens drizzled with soy sauce mixture and topped with coconut and sesame seeds.
