  • 1 cup jasmine rice, cooked the absorption method
  • 2tablespoons olive oil
  • 1/3 cup frozen peas
  • 1/3 cup frozen corn
  • 1 onion
  • 1 carrot
  • 3 celery sticks
  • 3 small capsicums
  • 2 eggs
  • 6tablespoons light soy sauce

Method

Step 1 of 2

Cook rice, with the peas and corn, I use the absorption method. Dice all of the vegetables. Whisk eggs and lightly fry and dice.

Step 2 of 2

Pop the frying pan on medium to high heat, put oil in heat and put rice in and all other ingredients, give a good mix through and then stir through the soy sauce, cook stirring for 2 minutes and serve.
