- 1 cup jasmine rice, cooked the absorption method
- 2tablespoons olive oil
- 1/3 cup frozen peas
- 1/3 cup frozen corn
- 1 onion
- 1 carrot
- 3 celery sticks
- 3 small capsicums
- 2 eggs
- 6tablespoons light soy sauce
Description
Quick, easy and full of flavour.
Method
Step 1 of 2
Cook rice, with the peas and corn, I use the absorption method. Dice all of the vegetables. Whisk eggs and lightly fry and dice.
Step 2 of 2
Pop the frying pan on medium to high heat, put oil in heat and put rice in and all other ingredients, give a good mix through and then stir through the soy sauce, cook stirring for 2 minutes and serve.
