  • 2tablespoons red wine vinegar (or white)
  • 1tablespoons dijon mustard
  • 1teaspoons maple syrup
  • 1/2 cup extra virgin olive oil
  • salt (to taste)
  • pepper (to taste)
  • 1/2 cups zucchini, very small dice - deseeded
  • 1/2 cups carrot, grated
  • 1/2 cups shallots, thinly sliced
  • 1/2 cups capsicum, very small dice
  • 1/2 cups fresh corn about 2 cobbettes (or can use canned if desired)
  • 1/2 cups frozen peas
  • 250grams pasta (your choice - i used fusilli this time)
  • 1 garlic clove, microplaned
  • 1teaspoons parsley, fresh or flakes
  • 1/2teaspoons paprika

Description

Excellent to serve as a "Meat Free Monday" meal.

Method

Step 1 of 5

Gather all ingredients together. Bring a large pot of water to the boil, add salt, then Pasta. Stir and cook for 8 minutes. At the 8 minute mark, add Corn and Peas, bring back to the boil and cook for a further 3 minutes.

Step 2 of 5

Whilst Pasta is cooking, start chopping and grating Vegetables. Add to a large serving bowl, along with the Garlic, Parsley and Paprika.

Once the Pasta, Peas and Corn are cooked, drained and cooled, add to serving bowl and mix to incorporate well.

Step 4 of 5

TO MAKE DRESSING - into a medium bowl, add Red Wine Vinegar, Dijon Mustard and Maple Syrup, whisk together. Add EVOO to Vinegar mix in a slow and steady stream, whisking constantly until Dressing thickens slightly. Season with Salt and Pepper if desired. Have a taste test and adjust accordingly.

Step 5 of 5

Pour Dressing over Salad and mix well again. Serve and enjoy or refrigerate until required.
