- 2teaspoons lemon pepper
- 1/2 cup mint, leaves finely chopped
- 1 small red onion, finely chopped
- 6 radishes, trimmed, sliced, shredded
- 1 lime juiced
- 200grams penne, cooked
- 525grams mayonnaise 97% fat free
- 2 stick celery, thinly sliced
- 1 large whole chicken

Method
Step 1 of 3
Bring water to the boil, add a pinch of salt and place 3/4 of a cup of uncooked penne pasta into boiling water. Return to the boil. For authentic al dente pasta, boil uncovered, stirring occasionally for 11 minutes. Remove from heat and drain water.
Step 2 of 3
Roast chicken according to packaging instructions. Once cooked then remove meat from chicken. Discard skin and bones. Roughly chop chicken meat and place in a large bowl with penne. Add chopped radishes, celery, onion and mint. Season. Toss until well combined.
Step 3 of 3
Combine mayonnaise, lime juice and lemon pepper in a bowl. Add to salad and gently stir until well combined. Place into an airtight container, sprinkle with extra mint and refrigerate until required.
