Tuna Pasta Salad + Snacks
13 Ingredients
- 1/4 cup fine desiccated coconut, plus extra 1/4 cup
- 125grams dates, pitted
- 1/2 small banana
- 1 small tomato, diced
- 4-5 grapes
- 20grams snow peas, chopped
- 2 baby cucumbers, halved (qukes)
- 1tablespoons cocoa powder, sifted
- 1/2 cup leftover cooked wholemeal pasta
- 1/3 cup rolled oats
- 1tablespoons hummus
- 45grams tin tuna in oil, drained (1/2 tsp oil reserved)
- 20grams cheese block, cut into cubes
Method

Lunch: For tuna pasta salad, combine pasta with tuna, reserved oil, tomato and snow peas. Serve with grapes and cheese cubes. Snack 1: Pack cucumber and hummus separately in lunch box. Snack 2: To make date & coconut bliss balls, place oats, coconut and cocoa in a food processor and process until finely chopped. With motor running, gradually add dates until finely chopped and well combined. Add banana and process until mixture comes together in a ball. Place extra coconut on a large plate. Roll 1 tbs of mixture into a ball then roll in coconut to coat. Repeat with remaining mixture to make 12 balls. Place in airtight container in fridge to chill. Thread 2 balls onto a lollypop stick and place in lunch box.
