Description

Try our delicious tuna salad, the perfect meal for a summer picnic or lunch. It's made with fresh ingredients and is sure to be a hit with the whole family.

Method

Step 1 of 2

Combine 1 cup cooked barley, 30g trimmed kale, chopped, 1 Roma tomato, diced, 95g tin tuna in springwater, drained, flaked, and 1 tbs chopped parsley. Add 1 tbs lemon juice and 1 tsp olive oil and toss to combine. 

Step 2 of 2

Divide between 2 airtight containers and pack 1 into lunch box. The second container will keep in the fridge for up to 2 days.
