- 1 small red onion, finely diced
- 250grams cherry tomatoes, halved
- 1 cup kalamata olives, pitted, roughly chopped
- 1/3 cup basil leaves, roughly chopped
- 1 1/2 cup tasty cheese, grated
- 2 crusty baguette
- 190grams pesto
- 250grams can, tuna in oil, drained, flaked

Method
Step 1 of 2
Preheat grill on high heat. Combine tuna, tomatoes, onion, basil leaves and olives in a bowl.
Step 2 of 2
Cut baguettes in half across the centre, then cut each half lengthways to make 8 pieces. Place onto a large baking tray. Toast cut sides until light golden. Spread pesto onto cut sides of baguettes. Spoon tuna mixture on top, spreading evenly. Sprinkle with cheese. Place under the grill and cook for 3 minutes or until the cheese has melted and is golden. Serve warm.
