- 300milliliter thickened cream
- 30grams butter
- 1 lemon, finely zested (juiced)
- 2/3 cup finely grated parmesan
- 375grams spaghetti
- 2 cup baby rocket leaves
- 1tablespoons fresh thyme leaves
- 4 garlic cloves (crushed)
Method
Step 1 of 3
Cook pasta in boiling, salted water according to packet instructions. Drain, reserving 1/3 cup cooking liquid.

Meanwhile, heat butter in a large frying pan over medium heat. Add garlic and thyme and cook, stirring, for 1 minute or until fragrant. Add cream and two-thirds of the zest, then simmer for 3 minutes or until slightly thickened. Stir in reserved cooking liquid, lemon juice and 1/2 cup cheese, then simmer for 2 minutes or until warmed through.
Step 3 of 3
Add pasta and two-thirds of the rocket, tossing to combine. Divide among plates, then serve topped with remaining cheese, rocket, zest and freshly cracked black pepper.
