  • 375grams fresh fettuccine
  • 1 red onion
  • 2tablespoons parsley
  • 1 bunch broccolini
  • 1/2 cup Italian dressing
  • 1 bunch kale
  • 2 kumato tomatoes
  • 1tablespoons olive oil
  • 200grams grape tomatoes, halved

Method

Step 1 of 3

Cook pasta in a large saucepan of boiling water following packet directions. Drain and set aside.

Step 2 of 3

Heat oil in the same pan over medium heat. Cook onion and garlic for 2 minutes or until softened. Add broccolini and stir for 1 minute. Add kale and cook for 2 minutes or until wilted.

Step 3 of 3

Add pasta vegetable mixture and toss to combine. Add kumato and grape tomatoes. Serve with dressing and parsley.
