- 500grams farfalle pasta
- 1 large red capsicum, deseeded, diced
- 500grams button mushrooms, sliced
- 2tablespoons balsamic vinegar
- 200grams bocconcini, drained, sliced
- 120grams baby spinach leaves
- 1tablespoons olive oil
- 1tablespoons olive oil (extra)
- 1/2 loaf sourdough bread (to serve)
Method
Step 1 of 4
Cook pasta in a large saucepan of salted boiling water until just tender as per packet instructions. Drain and return pasta to saucepan.
Step 2 of 4
Heat 1 tablespoon oil in a large deep frying pan over medium-high heat. Add mushrooms and cook for 8-10 minutes or until golden. Add capsicum and cook for 2 minutes. Add spinach leaves, stir and remove pan from heat.
Step 3 of 4
Add vegetable mixture, bocconcini, remaining oil and balsamic vinegar to pasta.
Step 4 of 4
Toss until well combined. Serve immediately with crusty bread.
