  • 3 large zucchini, trimmed, sliced
  • extra virgin olive oil (to serve)
  • 400grams penne pasta
  • 1 cup fire roasted capsicum strips
  • 2tablespoons olive oil
  • 1/3 cup small basil leaves, to serve
  • 1 1/2 cups BBQ chicken, shredded

Method

Step 1 of 3

Cook pasta in a large saucepan of salted boiling water as per packet instructions until tender. Drain.

Step 2 of 3

Heat oil in a frying pan over a medium heat. Add zucchini and cook for 10 minutes or until golden and tender. Season with salt and pepper.

Step 3 of 3

Place pasta into serving bowls. Top with zucchini, chicken and capsicum. Drizzle with extra virgin olive oil and sprinkle with basil leaves. Serve immediately.
