- 1 pinch salt
- 1 lemon, zest only
- 1 lemon, juice only (to serve)
- 2 red onions, finely chopped
- 2 cloves garlic, grated or finely chopped
- 1 fresh red chilli, deseeded and finely chopped
- 1 fresh green chilli, deseeded and finely chopped
- 350grams linguine
- 12 white anchovies in oil, drained
- 1 handful parsley, finely chopped

Method
Step 1 of 3
Heat the oil in a large frying pan, add the onions and a pinch of salt, and cook over a low heat for 5 minutes, or until soft. Add the garlic, chillies, and lemon zest, and cook for a few minutes more, stirring to make sure the mixture does not brown.

Meanwhile, cook the pasta in a large pan of boiling salted water for 6-8 minutes, or until it is cooked but still has a bit of bite to it. Drain, keeping back a tiny amount of the cooking water. Return the pasta to the pan and toss together.
Step 3 of 3
Stir the anchovies into the onion mixture, then toss with the pasta, add the parsley, and toss again. Serve with a squeeze of lemon.
