- 200grams spaghetti
- 1tablespoons extra virgin olive oil
- 4 150g salmon fillets, skin on
- 1 lemon, zested, juiced (plus extra wedges to serve)
- 1/2 bunch sage, leaves picked, torn
- 1/2 bunch lemon thyme, leaves picked
- 2tablespoons baby capers, drained
- 100grams snow peas, halved diagonally
- 100grams mini Roma tomatoes, halved
- 1/3 cup oven-roasted almonds
- 60grams Devondale Spreadable Dairy Soft butter
Description
After a no-fuss salmon recipe? These seafood pasta parcels feature herbs, tomatoes and a buttery sauce, and are baked individually for an impressive and easy dinner.
Method
Step 1 of 5
Preheat oven to 200°C/180°C fan-forced.
Step 2 of 5
Cook pasta according to packet directions. Drain. Transfer to a large bowl.

Meanwhile, heat oil in a large frying pan over medium-high heat. Cook salmon, skin-side up, for 2 minutes or until golden. Remove pan from heat.

Add zest, lemon juice, sage, thyme, capers, snow peas, tomato and almonds to pasta, then toss to combine. Place 4 x 40cm pieces of baking paper on workbench. Top each with one-quarter of the pasta mixture, 1 salmon fillet and one-quarter of the butter.
Step 5 of 5
Bring sides of the paper up and fold over a few times to seal. Secure with kitchen twine. Place onto a baking tray. Bake for 15 minutes or until salmon is cooked. Transfer parcels to plates. Serve with lemon wedges.
