- 400grams spaghettini
- 1 cup frozen peas
- 1/2 cup small mint leaves
- 1 brown onion, finely chopped
- 1 large lemon juiced and rind
- 6 prosciutto, thin slices
- 1tablespoons olive oil
- 220grams smoked salmon, roughly chopped
- 1/2 cup light thickened cream

Method
Step 1 of 4
Preheat oven grill on high. Place prosciutto onto a baking tray. Place tray under grill and cook for 3 minutes until golden. Turn over and cook for 2 minutes until crisp. Cool. Break into shards.
Step 2 of 4
Cook pasta in a large saucepan of salted, boiling water until just tender. Drain and return to saucepan.
Step 3 of 4
Heat oil in a frying pan over medium heat. Add onion and cook for 3 minutes or until soft. Add peas, cream, lemon rind and juice. Stir until combined and mixture comes to the boil. Remove from heat.
Step 4 of 4
Add to pasta with smoked salmon and mint leaves. Toss until combined. Transfer to serving plates. Top with prosciutto shards and freshly ground black pepper.
