  • 100grams baby rocket
  • 1/4 cup persian feta
  • 2tablespoons extra virgin olive oil
  • 1/4 cup lemon juice

Method

Step 1 of 5

Cook pasta in a saucepan of boiling, salted water (following packet directions) until tender.

Step 2 of 5

Drain, reserving 1/4 cup of cooking liquid and return pasta to saucepan.

Step 3 of 5

Add smoked salmon, olive oil, lemon juice, feta and baby rocket to pasta.

Step 4 of 5

Warm through, tossing, over low heat for 1 to 2 minutes or until rocket just starts to wilt.

Step 5 of 5

Season with pepper to your liking and serve.
