  • 8 eggs
  • 1tablespoons chives, chopped
  • 2tablespoons fromage frais
  • 125grams smoked salmon, cut into strips
  • 1 pinch salt
  • 1 pinch pepper
  • 4 slices gluten-free bread, toasted and buttered, to serve

Method

Step 1 of 3

Using a hand whisk, whisk the eggs and fromage frais together with some salt and pepper.

Step 2 of 3

Heat a saucepan over a medium heat and pour in the egg mixture. Cook for a minute, and then using a spatula, gently push the egg around to allow it all to cook.

Step 3 of 3

When the egg looks like creamy curds, stir in the chives and smoked salmon and serve immediately on the toast, if using.
