  • 5tablespoons olive oil, save 1 tbs for searing
  • 1 clove garlic, grated or finely chopped
  • 1 small fresh hot red chilli, finely chopped
  • 2 1/2tablespoons black sesame seeds, save 1/2 tbs for sprinkling
  • 1 pinch salt
  • 2 yellowfin tuna steaks, about 300g each, halved lengthways
  • 2 radishes
  • 1 lemon, juice only
  • 1/2 bunch of fresh chives, chopped into 5cm lengths

Method

Step 1 of 4

Put the oil, garlic, chilli, sesame seeds, and a sprinkle of salt on a large flat tray or dish. Mix well. Rinse the tuna steaks, and pat dry with kitchen paper. Carefully press the steaks into the sesame seed mixture so that it sticks and coats the fish. Turn the steaks over, and coat the other side. Leave to marinate in the refrigerator for at least 1 hour.

Meanwhile, cut the radishes into fine matchsticks, and put them in a small bowl with half of the lemon juice (to prevent them browning).

Heat a little extra oil in a frying pan over a high heat. When the oil is hot, sear each tuna steak for about 20 seconds on each side. Leave to rest for 5 minutes.

Step 4 of 4

To serve, put a seared tuna steak on each of 4 serving plates, and drizzle with the remaining lemon juice. Drain the radish matchsticks, and scatter over the top. Sprinkle with the chives and a few extra sesame seeds (if using), and serve immediately.
