- 35grams mild taco seasoning mix
- 1 avocado, diced
- 640grams boneless salmon fillets
- 500grams fresh sweet corn
- 1 small red onion, finely diced
- 1 bunch lettuce
- 5milliliter olive oil spray
- 1tablespoons extra virgin olive oil
- 1 bunch coriander, sprigs removed
- 1 lemon, juiced
- 1 lime, cut into wedges (to serve)
- 250grams solanato tomatoes
- 8 free from gluten corn tortilla
Method
Step 1 of 4
Heat a chargrill over medium-high heat. Spray corn with oil and place on grill. Cook for 10 minutes or until charred all over. Cool
Step 2 of 4
Meanwhile, roughly chop half of the coriander and combine with tomato, avocado, onion, oil and lemon juice. Remove kernels from corn, add to bowl and season. Toss to combine.
Step 3 of 4
Reheat chargrill over medium-high heat. Cook tortillas for 1 minute on each side or until charred. Transfer to a plate and cover with foil.
Step 4 of 4
Sprinkle taco seasoning over salmon fillets. Chargrill for 2-3 minutes each side or until cooked to your liking. Flake salmon. Top tortillas with lettuce, corn salad, salmon and remaining coriander. Serve with lime.
