  • 2 medium zucchini
  • 8 slice prosciutto, thin
  • 1 pinch black pepper
  • 2tablespoons extra virgin olive oil (for serving)
  • 360grams halloumi

Method

Step 1 of 4

Preheat a chargrill pan over a medium high heat.

Step 2 of 4

Cut halloumi cheese into 12 cubes. Cut prosciutto into 3 short pieces and wrap around halloumi cubes.

Step 3 of 4

Slice zucchini into 3cm thick slices. Thread a prosciutto wrapped cube of halloumi, a cherry tomato and a slice of zucchini onto prepared skewers. Cook skewers on chargrill for 2-3 minutes on each side or until charred.

Step 4 of 4

Transfer to a serving platter. Drizzled with olive oil and sprinkle with freshly ground black pepper before serving.
