  • 200grams pitted black olives
  • 2 cloves garlic
  • 1 lemon, zest and juice
  • 2tablespoons extra virgin olive oil
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 350grams linguine
  • 1 handful fresh flat-leaf parsley, finely chopped
  • 1 handful fresh basil leaves, torn
  • 25grams Parmesan cheese, shaved with a vegetable peeler

Method

Step 1 of 3

Place the olives, garlic, lemon zest, and lemon juice in a food processor and whiz until chopped. With the motor still running, slowly add the oil until the mixture forms a smooth paste. Transfer to a bowl. Taste and season with salt and black pepper, if needed.

Step 2 of 3

Cook the pasta in a large pan of boiling salted water for 6 minutes, or until it is cooked but still has a bit of bite to it. Drain, keeping back a tiny amount of the cooking water. Return the pasta to the pan, and toss together.

Step 3 of 3

Toss the pasta with the flat-leaf parsley and basil, then either toss with the olive paste, or spoon the paste over the top. Sprinkle with the Parmesan shavings, and serve.
