  • 1tablespoons extra virgin olive oil
  • 300milliliter pure cream
  • 400grams orecchiette
  • 1/2 cup parmesan, shaved (to serve)
  • 4 rasher streaky bacon, rind removed, thinly sliced
  • 1/4 cup dry white wine
  • 2 cloves garlic, crushed

Method

Step 1 of 2

Heat oil in a deep frying pan over medium heat. Add bacon, onion and garlic. Cook for 4 minutes or until onion has softened. Add mushrooms. Cook for 3 minutes or until just tender. Stir in wine. Cook for 2 minutes or until most of the liquid has evaporated. Add cream. Reduce heat to medium-low. Simmer for 5 minutes or until slightly thickened.

Meanwhile, cook pasta in a large pan of boiling, salted water as per packet instructions. Drain well and add to pan with mushroom sauce. Season to taste. Toss over heat for 2 minutes or until heated through. Serve topped with parsley and parmesan.
