For the meatballs
  • 450grams turkey, minced
  • 60grams breadcrumbs
  • 1 shallot, sliced
  • 1 bunch basil, chopped
For the sauce
  • 1 onion, chopped
  • 1teaspoons dried rosemary
  • 1teaspoons dried oregano
  • 1teaspoons dried thyme
  • 2tablespoons tomato purée
  • 1/3 cup olive oil, for frying, save 0.8 cup for drizzling
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 450grams dried spaghetti
  • 3 cloves garlic, crushed
  • 800grams tomatoes, chopped
  • 1 egg, beaten

Description

Minced turkey makes a healthy, low-fat alternative to minced beef in this popular family dish.

Method

Step 1 of 4

First, make the sauce. Heat a little oil in a saucepan over a medium heat. Sauté the garlic and onion briefly, then add the rosemary, oregano, and thyme. Cook for 2-3 minutes, or until the onion has softened slightly. Stir in the tomato purée, then add the chopped tomatoes with their juices. Reduce the heat and simmer to thicken for 1 hour.

Meanwhile, preheat the oven to 180°C (Gas 4). For the meatballs, mix the turkey, breadcrumbs, shallot, basil, egg, and seasoning in a bowl. Using your hands, from the mixture into twelve 5cm (2in) balls and place them on a baking sheet lined with baking parchment.

Bake for 35-40 minutes, or until browned, sizzling, and cooked through. Remove from the oven and put them into the simmering sauce, stirring to incorporate.

Cook the pasta in a large pan of boiling salted water for 8-10 minutes, or according to packet instructions. Drain, drizzle over a little oil, and toss well. Serve the spaghetti hot, topped with a generous portion of the sauce and meatballs.
