- 350grams baby spinach leaves, roughly chopped
- 1 lemon, juiced and rind finely grated
- 20grams parmesan, finely grated (to serve)
- 625grams roast chicken & garlic ravioli
- 200grams fresh ricotta, crumbled
- 2tablespoons olive oil
- 2tablespoons dill, finely chopped

Cook ravioli as per pack instructions.
Step 2 of 3
Meanwhile, heat oil in a large frying pan over medium heat. Add onion and cook for 3 minutes or until softened. Add spinach and toss for 2 minutes or until just wilted.
Step 3 of 3
Drain ravioli and add to spinach with lemon rind, juice, ricotta and dill. Season to taste. Gently toss to combine. Transfer to serving bowls. Drizzle with extra oil and sprinkle with parmesan.
