- 1/2 cup basil, shredded
- 1 small red chili, deseeded and finely sliced
- 125grams cherry tomatoes, halved
- 6 zucchini, shredded on a mandolin
- 2tablespoons avocado oil
- 300grams chicken, cooked and shredded
- 1 lemon, juiced and rind finely grated
- 1/3 cup chicken stock
- 1/2 cup parmesan, grated (to serve)
- 1/4 cup black chia seeds
- 2 clove garlic, finely sliced
- 1/2 cup pine nuts, toasted
Method

Using a mandolin, shred zucchinis into long spaghetti & place into a large bowl.
Step 2 of 3
Heat oil in a frying pan. Add garlic and chilli and cook for 1 minute or until garlic is light golden. Add tomatoes; cook for 2 minutes or until soft. Add lemon juice, rind, chicken stock, pine nuts, chicken and chia seeds, swirl pan to combine. Cook for 2 minutes to heat chicken through then turn off heat. Add basil and season well.

Toss the zucchini pasta through the chicken mixture, divide between serving plates and garnish with parmesan.
