- 2tablespoons extra virgin olive oil
- 1 pinch freshly ground black pepper (to serve)
- 60grams baby rocket
- 125grams fresh ricotta
- 400grams roasted chicken meat, shredded

Step 1 of 4
Cook penne in a large saucepan of salted boiling water until just tender as per packet instructions.
Step 2 of 4
Drain and return to saucepan.

Toss until well combined. Serve topped with pepper.
