  • 2 cup skim milk
  • 400grams broccoli, cut into small florets
  • 1 red onion, chopped
  • 200grams bacon, chopped
  • 1/2 cup finely grated parmesan
  • 325grams penne
  • 1tablespoons olive oil
  • 1/4 cup small fresh basil leaves
  • 1tablespoons fresh rosemary, plus extra to serve
  • 3 cloves garlic, crushed

Method

Step 1 of 3

Cook pasta in a large saucepan of boiling, salted water, following packet instructions, until al dente. Add broccoli to pan for the last 2 minutes of cooking. Drain. Return to pan.

Meanwhile, heat oil in a large frying pan over medium-high heat. Add onion, bacon, garlic and rosemary, stirring, for 2-3 minutes or until softened.

Step 3 of 3

Sprinkle in flour and stir to combine. Remove from heat and slowly pour in milk, stirring constantly. Return pan to medium heat and cook for 4-5 minutes or until thickened. Season. Stir in 1/3 cup parmesan and pasta mixture. Stir to coat. Serve topped with basil, extra rosemary and remaining parmesan.
