- 1 bunch spinach, leaves removed, washed and shredded
- 250grams mini roma tomatoes, quartered
- 2tablespoons parmesan cheese, grated
- 500grams macaroni pasta
- 2 slices thick bread, roughly chopped
- 4teaspoons extra virgin olive oil (save 2 tbs to drizzle)
- 500grams chicken sausages
- 2 cloves garlic, crushed

Method
Step 1 of 10
Place bread into a food processor and process until crumbs form.
Step 2 of 10
Stir crumbs in a non-stick frying pan over a medium-low heat for 4 minutes or until golden. Add garlic and stir until well combined. Remove from heat and cool.

Stir through parmesan cheese.
Step 4 of 10
Heat oil in frying pan. Add sausages and cook for 8 minutes, turning often, until browned on all sides and cooked through.

Transfer to a plate and cover with foil.

When cool enough to handle, slice thinly.

Meanwhile, cook pasta in a large saucepan of boiling salted water until just tender. Add spinach and drain immediately.

Return to saucepan with sausage and tomatoes.

Toss to combine.

Serve immediately drizzled with oil and sprinkled with breadcrumbs.
