  • 1 bunch spinach, leaves removed, washed and shredded
  • 250grams mini roma tomatoes, quartered
  • 2tablespoons parmesan cheese, grated
  • 500grams macaroni pasta
  • 2 slices thick bread, roughly chopped
  • 4teaspoons extra virgin olive oil (save 2 tbs to drizzle)
  • 500grams chicken sausages
  • 2 cloves garlic, crushed

Method

Step 1 of 10

Place bread into a food processor and process until crumbs form.

Step 2 of 10

Stir crumbs in a non-stick frying pan over a medium-low heat for 4 minutes or until golden. Add garlic and stir until well combined. Remove from heat and cool.

Step 3 of 10

Stir through parmesan cheese.

Step 4 of 10

Heat oil in frying pan. Add sausages and cook for 8 minutes, turning often, until browned on all sides and cooked through.

Transfer to a plate and cover with foil.

When cool enough to handle, slice thinly.

Meanwhile, cook pasta in a large saucepan of boiling salted water until just tender. Add spinach and drain immediately.

Return to saucepan with sausage and tomatoes.

Step 9 of 10

Toss to combine.

Step 10 of 10

Serve immediately drizzled with oil and sprinkled with breadcrumbs.
