  • 400grams La Molisana Spaghetti
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 2 clove garlic, crushed
  • 4 anchovy fillets, roughly chopped
  • 6 large fresh tomatoes, roughly chopped
  • 1/2 cup Kalamata olives
  • 2tablespoons capers
  • 1 lemon, juiced
  • 2tablespoons parsley, chopped
  • sea salt (to taste)
  • cracked pepper (to taste)
  • parmesan, shaved (to serve)

Method

Step 1 of 4

Bring a large saucepan of water to the boil over high heat. Reduce heat to medium and add spaghetti, cook for 11 minutes. Drain and reserve 1/4 cup of pasta water.

Step 2 of 4

Meanwhile heat oil a large frypan over medium high heat, add onions and cook for 2 minutes till softened. Add garlic and anchovies and cook for 1 minute.

Step 3 of 4

Add tomatoes, olives, capers. Reduce heat to medium and cook for 10-12 minutes till thickened. Add drained cooked spaghetti and reserve pasta water to the pan, toss to coat. Stir in juice, parsley and season with a little salt and cracked pepper.

Step 4 of 4

Garnish with shaved parmesan cheese.
